I’m trying to recover from yesterday’s heatwave (I hate full summer), my birthday last week, and a general struggle with 2025 thus far. The world feels very broken right now, and I am battling to look past the madness and focus on more positive things. Is anyone else feeling the same?
As always, I am comforted by delicious food and making recipes using seasonal produce. Tomatoes are at their peak right now, so I wanted to highlight a few recipes that might inspire you.
Corn salad with tomatoes, feta and herbs
I recently made the most delicious and simple salad with lightly cooked corn, tomatoes, bell pepper, feta, and herbs. A squeeze of lime and a drizzle of extra virgin olive oil were all this salad needed as a dressing. This salad goes well with grilled chicken and fish (just skip the feta).
The best tomato galette with flaky pastry
This delicious and rustic tart is incredibly easy to make. Galettes are the most forgiving of all pastries, as you can see from my video—perfection is not required here. I lined the base of the galette with herby, garlicky ricotta, which prevents a soggy bottom and adds creaminess to offset the acidity of the tomatoes. Next time, I might try it with half ricotta and half Boursin. I often find myself dreaming about this dish.
Tomato tarte tatin with basil and Parmesan
If you want to skip making the pastry altogether you could try this puff pastry tarte tatin with Parmesan and basil. This makes a lovely side dish with roast meat or chicken.
Easy baked feta with tomatoes and olives
I made this recipe in 2012—long before baking feta with tomatoes became a viral thing on TikTok. It’s a delicious mixture, perfect for scooping onto crispy toast or a toasted baguette or folding through warm pasta.
Tomato & basil crostini with whipped goat cheese
A delicious and summery appetizer.
Roasted peppers stuffed with tomatoes and garlic
Piedmontese Peppers are something I can hyper-fixate on and this recipe by Simon Hopkinson is perfection. They are delicious when served at room temperature as part of a Mediterranean feast.
Orzo with roasted tomatoes, feta and olives
An easy orzo pasta with roasted tomatoes, basil pesto, feta and olives.
Whipped feta with roasted tomatoes & garlic
A delicious and easy summer dip. Whipped ricotta would also work as the base.
Pan con tomate with fried eggs (or not)
I can’t get enough of pan con tomate (Spanish tomato bread). Grate ripe tomatoes and top your toast—it couldn’t be easier.
Easy no-knead ciabatta topped with cheese & tomatoes
This is such an incredible bread recipe that is whipped up in a stand mixer. No kneading is required.
Use tinned tomatoes in this recipe and Marcella Hazan’s iconic tomato & butter sauce—it’s the best there is. I like to blend the onion back into the sauce at the end because it adds so much flavour.
